This standard specifies the requirements for vanilla belonging to the species Vanilla fragrans (Salisbury) Ames - Syn. [Vanilla planifolia Andrews].
Cured vanilla shall have characteristics consistent with the quality grade (see 6.2); have undergone treatment conducive to the development of its flavor and aroma; be dark chocolate brown to light red.
Green vanilla pods shall be fully developed, with plump and firm fruits, dense black seeds; color from dark green to light green, slightly yellowish or with the tip (0.2 cm-0.5 cm) light yellow, and the two longitudinal lines of the pod obviously lighter or slightly yellowish.
The vanillin content mainly depends on the variety, growing region, cultivation, harvesting and processing conditions of the vanilla, as well as its length.
Each laboratory sample shall be not less than 100 g.
